I’ve loved chocolate and coconut since I was a kid, back when I spent the warmest, happiest parts of my life with my grandparents down in Florida. Coconut patties were everything. It’s been my thing my whole life. Coconut Patties, Mounds, Bounty Bars, Samoa Girl Scout cookies…
I became a triathlete and a mom of four, with picky eaters, and a gluten intolerance of my own. I LOVE sweets. I also care deeply about health, nutrition, and creating a sustainable lifestyle, rather than a punishing one.
